I was looking for a dinner recipe to cook for Valentine’s day. That was the one for me. I would highly recommend for a date night 🙂 Quick to cook, comfort food, perfect with red wine and healthy with the addition of the veggies. Choose good quality lean sausages and fresh gnocchi for the best result.
Why not turn your favourite antipasto platter into breakfast minus the wine and plus coffee:) Add or remove ingredients as you please, making your favourite platter!
I love cooking this recipe in spring and summer, when zucchinis are in abundance. It is so satisfying to turn a few simple, inexpensive ingredients into a healthy dinner. Serve with your favourite side salad.
It is always good to have a few healthy breakfast recipes up your sleeve to help you live a balanced life. You wake up on Sunday morning, take your time to make the rosti, take your time to enjoy the delicious breakfast you have created and you feel so good that you can’t wipe off the smile from your face 🙂
A generous sprinkle of melted bocconcini on top makes this simple dish quite exciting. I always add a splash of wine to my Bolognese sauce, but it is not part of official recipe 🙂 Buy good quality fresh gnocchi that taste as good as home made.
I love eating vegetarian pastas – it leaves you feeling satisfied and not that guilty about the amount of calories consumed 🙂 Not too mention that the cooking time of just 20 minutes is a big bonus too! The leftovers for lunch the next – one more tick!
Two main ingredients – sweet potatoes and turkey steaks. I have topped up the sweet potatoes with sweet chilli sauce ( I added too much 🙂 ) and grated ginger and added lemon zest and lemon juice to the turkey steaks. Little touches turned into a great flavour! Serve with the salad of your choice ( I love the Greek version with the splash of soft feta cheese).
Veggie intake tick. If you manage to stick to just one pita, it is a pretty healthy quick dinner option:)I like using the chicken souvlaki strips from Coles, saves time and tastes great. You will have some leftover pitas, you can refrigerate them and use as a pizza base later on.
I don’t remember being so excited about having eggs for dinner. I could not wait to dip my bread into the saucy goodness. I have used turkey meatballs for a leaner version, you can substitute for beef or lamb meatballs. If you have got some time on your hands, make your own meatballs.
The ingredients are very simple – your usual antipasto culprits , white fish and a can of cannellini beans! A perfect after work out dinner to keep you calories in check.
