It is always good to have a few healthy breakfast recipes up your sleeve to help you live a balanced life. You wake up on Sunday morning, take your time to make the rosti, take your time to enjoy the delicious breakfast you have created and you feel so good that you can’t wipe off the smile from your face 🙂
Grate sweet potatoes. Squeeze out the excess liquid and place in a bowl. Add 1 lightly beaten egg, flour and season with salt and pepper. Mix well to combine.
Heat the oil in a large frying pan. Spoon the mixture and flatten the mixture once it hits the pan. Once fried, place the rosti on paper towel to drain.
Slice asparagus and capsicum and grill for 5 minutes.
To poach the eggs, cook them in boiling water for 2 minutes. You can add vinegar to the water if you like.
Assemble your breakfast - place rosti, top with grilled vegetables, poached egg, slices of avocado. Sprinkle with feta.
