The ingredients are very simple – your usual antipasto culprits , white fish and a can of cannellini beans! A perfect after work out dinner to keep you calories in check.
Preheat oven to 200C. Cut 2 large pieces of foil to make your parcel. Place fish fillet in the centre of the foil. Season fish with salt and pepper and drizzle with olive oil. Place tomatoes, olives, capers, artichokes, capsicum slices and beans around the fish, then squeeze over the the lemon juice. Fold the foil to make a parcel.
Place parcels on a baking tray and bake for 1o minutes.
Rest the parcels for a few minutes, then open parcels. Serve with salad leaves.
