This dish is a perfect compliment to a a movie night in. Place all the elements on a large chopping board and dig in. No fork required. If you are not kale fan, maybe the kale in chips form will win you over 🙂
This salad is amazingly satisfying. Lucky it is on the spicy side, so I can’t go too crazy with my portion size. I use a 700 grams packet of gnocchi for the recipe, but probably for majority of people 500 grams packet will be enough for 2 people 🙂 I have cooked this dish with either chorizo or chorizo salami. My preference is chorizo salami as the slices are thinner.
Lots of yummy stuff added to boring scrambled eggs – roasted tomatoes with bocconcini (or mozzarella)pieces on top, asparagus and shimeji mushrooms. Healthy way to start the day!
You can add tomato&basil cream cheese to the pasta salad, if you are not worried about the extra calories. If you wonder what’s agnolotti – it is a ravioli shaped pasta. Mystery solved.
You can be quite creative with this salad and choose alternatives. If you don’t like beef roast, choose a piece of eye fillet. To speed up the process, you can use the beetroot from the jar. Instead of beetroot hommus, use the regular hommus if you prefer. Lots of options to please everyone 🙂
