Lemon roast chicken

I can easily eat this lemon infused roast chicken every Sunday night. You can add any roast veg in season to accompany the chicken and potatoes. I have tried it with parsnips and sweeds.


Ingredients

  • 1
    whole chicken
  • Olive Oil
  • 2 Teaspoons
    ground paprika
  • 1 Teaspoon
    cumin
  • 1
    bunch baby carrots
  • 500 Grams
    potatoes

Instructions

  1. Preheat oven to 220 C. Clean chicken cavity. Drizzle chicken with oil. Rub spices into chicken skin. Season with salt and pepper. Place lemon wedges into cavity.

  2. Cut potatoes into wedges. Drizzle potatoes and baby carrots with oil.

  3. Place chicken, potatoes and baby carrots on baking tray. Roast for 40 minutes or until chicken is tender and potatoes are golden.
