Baked Gnocchi

Ingredients

  • 500 Grams
    freash gnocchi
  • Olive Oil
  • 1
    brown onion finely chopped
  • 200 Grams
    short-cut bacon, coarsley chopped
  • 300 Grams
    cup mushrooms, thinly sliced
  • 1
    garlic clove, crushed
  • 1/2 Cup
    white wine
  • 250 Millilitres
    cooking cream
  • 120 Grams
    sour cream
  • 50 Grams
    baby kale salad mix
  • 1 Cup
    fresh breadcrumbs
  • 1 Cup
    grated cheese
  • 2 Tablespoons
    finely chopped parsley

Instructions

  1. Preheat oven to 200 C. Grease a baking dish. Cook gnocchi following packet instructions. Drain well.

  2. Meanwhile, heat the oil in a large frying pan over medium heat. Cook the onion and bacon, stirring, for 5 minutes.

  3. Add the mushrooms and garlic to the onion mixture . Cook until mushrooms are browned. Add the wine and cook for 3 minutes. Stir in the cooking cream and sour cream. Simmer for 5 minutes until the sauce thickens slightly. Stir in the kale and gnocchi. Spoon into the prepared dish.

  4. Combine the breadcrumbs, cheese and parsley in a small bowl. Sprinkle evenly over the gnocchi mixture. Bake for 15 minutes.
