Salmon and ginger lovers – this recipe is a must to try. I am addicted now! It requires a bit of time coordination when making salad and cooking salmon. You will time it perfectly after cooking it a couple of times.
It is a descent dinner dish even though it is called salad. It is a perfect after workout dish if you want a healthy and quick dinner. I love using Thai spiced marinated chicken breasts from Coles for this recipe. It only takes 20 minutes to cook in the oven and turns out tender and juicy. You can also use regular chicken breast. My favourite part is making the salad dressing by mixing different Asian sauces and dipping my finger in to try the flavour.
If you think that vegetarian dishes will leave you hungry, this dish will prove you wrong. It is a surprisingly filling dish – or maybe I ate too many servings 🙂
I just love the rich miso coating. I have used baby eggplants for the recipe but you can also go for the regular eggplants. If you don’t like quinoa, replace it with brown rice .
The hero of the dish (I watch MKR too much 🙂 ) is a cauliflower bowl with grilled haloumi cheese. I have paired up the cauliflower bowl with steak. It is a very versatile dish. You can eat cauliflower bowl on it is own or add steak , fish or chicken to the side if you are craving for more protein. Perfect autumn dish when cauliflower is in abundance.
This is one of my favourite salmon dishes. Both salmon and vegies are coated in a delicious soy ginger sauce. You can always substitute vegies depending on the season and contents of your fridge.
Mushroom sauce goes well with the steak and of course home made mashed potatoes! Cook your potatoes for the mash whilst the steak is resting. Serve with the side salad or boiled vegies.
I love salmon and sweet potatoes, and both are present in this recipe. Whilst the salmon is baking in the oven, make the sweet potato mash with a dash of ginger! I have thrown some kale chips on the plate as well.
