Zucchini rosti with salmon and poached eggs

It takes a while to whip up the rosti but on a plus side you will have plenty leftovers for later.


Ingredients

  • 2
    zucchini
  • 2
    large potatoes
  • 4
    eggs
  • 3/4 Cups
    flour
  • 100 Grams
    smoked salmon

Instructions

  1. Grate zucchini and potatoes. Squeeze out the excess liquid and place in a bowl. Add 2 lightly beaten eggs, flour and season with salt and pepper.

  2. Heat the oil in a large frying pan. Spoon the zucchini mixture and flatten the mixture once it hits the pan. Once fried, place the rosti on paper towel to drain.

  3. To poach the eggs, cook them in boiling water for 2 minutes. You can add vinegar to the water if you like.

  4. Stack smoked salmon and poached egg on top of the rosti . Season with dill, capers and sour cream if you like.
