A healthy twist on a traditional Bolognese. Double up a serving size without feeling guilty!

Heat the oil in a large frying pan, and fry onion and garlic over lower heat until softened. Stir in the turkey mince and cook for 5 minutes, stirring frequently. Sir in the chopped tomatoes, tomato puree, stock and a dash of red wine. Bring to the boil then simmer, uncovered for 10 minutes. Stir the zuccini and fresh tomatoes in the sauce and simmer for 5 minutes. Season.
Cook pasta. Drain pasta , spoon the sauce over pasta and sprinkle with parsley.
