Penne with turkey bolognese

A healthy twist on a traditional Bolognese. Double up a serving size without feeling guilty!


Ingredients

  • Olive Oil
  • 1
    brown onion finely chopped
  • 2
    chopped garlic cloves
  • 500 Grams
    turkey mince
  • 1
    can of crushed tomatoes
  • 2 Tablespoons
    tomato puree
  • 300 Millilitres
    chicken stock
  • 350 Grams
    spaghetti or penne
  • 1
    zuccini
  • 4
    big tomatoes, coarsely chopped
  • splash of red wine
  • parsley to sprinkle

Instructions

  1. Heat the oil in a large frying pan, and fry onion and garlic over lower heat until softened. Stir in the turkey mince and cook for 5 minutes, stirring frequently. Sir in the chopped tomatoes, tomato puree, stock and a dash of red wine. Bring to the boil then simmer, uncovered for 10 minutes. Stir the zuccini and fresh tomatoes in the sauce and simmer for 5 minutes. Season.

  2. Cook pasta. Drain pasta , spoon the sauce over pasta and sprinkle with parsley.
