Toad-in-the-hole

A low-fat version of an old favourite. Guilt free pleasure! Serve with your fav green salad.


Ingredients

  • 1
    red onion, cut into wedges
  • 6
    thick low-fat pork sausages
  • Olive Oil
  • 100 Grams
    plain flour
  • 1
    egg
  • 300 Millilitres
    skimmed milk
  • 2 Teaspoons
    wholegrain mustard

Instructions

  1. Preheat the oven to 200C. Tip the onions into tin, arrange the sausages on top of the onions. Add oil and roast for 15 minutes.

  2. While they are roasting, make the batter. Stir the flour into the bowl, drop the egg in the center and beat in the milk until it makes a smooth batter. Stir in mustard and thyme .

  3. Pour the better into the tin and return to the oven for 20 minutes until the batter is risen and golden.
