Sweet potato and cauliflower curry

Simple vegetarian curry will warm your soul. Just a few simple ingredients but full of flavour!


Ingredients

  • 3
    sweet potatoes diced
  • 2
    chopped garlic cloves
  • 1
    brown onion finely chopped
  • 1
    can of chickpeas
  • 200 Grams
    cauliflower
  • 1
    jar of Korma sauce
  • curry leaves
  • 1
    packet of naan bread
  • 1 Pinch
    chopped ginger

Instructions

  1. Brown sweet potato in oil, add curry leaves, garlic, ginger, onion, korma paste - cook for 5-10 mins.

  2. Add can of chick peas including juices from the can , cauliflower, 600ml water and cook for 30 mins, stirring occasionally.

  3. Serve with naan bread.
