Soy ginger salmon and vegetables sti fry

This is one of my favourite salmon dishes. Both salmon and vegies are coated in a delicious soy ginger sauce. You can always substitute vegies depending on the season and contents of your fridge.


Ingredients

  • 2
    salmon fillet
  • 3 Tablespoons
    soy sauce
  • 2 Tablespoons
    honey
  • 1
    finely grated zest andjuice of one lemon
  • 2
    garlic cloves, finely chopped
  • 1 Piece
    ginger, finely grated
  • 2
    zucchini, cut into matchsticks
  • 2
    carrots, cit into matchsticks
  • 1
    packet of baby corn, halved
  • Olive Oil

Instructions

  1. Grill the salmon on the barbeque for 8 minutes . You can use the oven instead.

  2. Prepare the sauce by mixing soy sauce, ginger, garlic, lemon and lemon zest. Add honey and mix well. You can also add a bi of hot water to help honey to dissolve.

  3. Heat a wok to really hot, then add the oil. Stir fry the vegetables. Add the sauce, coat the vegetable and let it bubble.

  4. Place salmon on the serving plate. Pop the vegetables on top, covering the salmon with yummy sauce.
