Sausage gnocchi and warm kale & bean salad
I was looking for a dinner recipe to cook for Valentine’s day. That was the one for me. I would highly recommend for a date night 🙂 Quick to cook, comfort food, perfect with red wine and healthy with the addition of the veggies. Choose good quality lean sausages and fresh gnocchi for the best result.

Squeeze the sausage meat out of the skins, break the meat apart. Heat olive oil in a frying pan, add fennel seeds and rosemary. Add sausage meat. Cook until brown. Add broccoli florets, red wine and sauce. Stir to combine. Reduce heat and cook for about 5 minutes or until the sauce has reduced.
Cook gnocchi in a boiling water for 2 minutes. When the gnocchi float up to the surface, they are ready. Drain and add to the pan, once the sauce has simmered down.
To make the salad - cut off the bean stalks. Heat olive oil in the frying pan. Add green beans, kale, garlic, almond flakes and cook for 2 minutes. Serve with the sausage gnocchi.
