Lazy Sunday Brekkie
Ahhmazing brekkie or even brunch, as the meal will keep you full for a while. If you don’t have all the ingredients at hand, rummage through your fridge and cupboards, and find an alternative ingredient. It will still taste amazing, trust me. I have tried this recipe with different type of meats and beans.
Ingredients
Instructions
Fry bacon (or leftover meat or salami) with olive oil in a frying pan. Remove bacon and set aside
Add onion, garlic, a pinch of oregano and fry till fragnant
Add drained beans, a pinch of smoked paprika and fresh sliced tomato. Fry till beans are toasty
Add a can of tomatoes and tomato sauce. Lower the heat and simmer for about 5 minutes
Re-introduce bacon and nestle it evenly around the pan
Make insertions around the pan for your eggs. Crack the eggs, cover with the lid and poach for about 5 minutes till whites are done but yolks are still runny
Remove frying pan from the heat and spoon over avocado in chunks
