Lazy Sunday Brekkie

Ahhmazing brekkie or even brunch, as the meal will keep you full for a while. If you don’t have all the ingredients at hand, rummage through your fridge and cupboards, and find an alternative ingredient. It will still taste amazing, trust me. I have tried this recipe with different type of meats and beans.


Ingredients

  • 1/2
    red onion, sliced into wedges
  • 4 Slices
    Bacon rashers
  • 2
    chopped garlic cloves
  • 1 Pinch
    dry oregano and smoked paprika
  • 1
    roughly chopped tomato
  • 1
    can of kidney beans
  • 1
    can of crushed tomatoes
  • 6
    eggs
  • 2 Tablespoons
    Heston tomato sauce
  • 1/2
    avocado
  • Toast or flatbread to serve

Instructions

  1. Fry bacon (or leftover meat or salami) with olive oil in a frying pan. Remove bacon and set aside

  2. Add onion, garlic, a pinch of oregano and fry till fragnant

  3. Add drained beans, a pinch of smoked paprika and fresh sliced tomato. Fry till beans are toasty

  4. Add a can of tomatoes and tomato sauce. Lower the heat and simmer for about 5 minutes

  5. Re-introduce bacon and nestle it evenly around the pan

  6. Make insertions around the pan for your eggs. Crack the eggs, cover with the lid and poach for about 5 minutes till whites are done but yolks are still runny

  7. Remove frying pan from the heat and spoon over avocado in chunks
