Grilled salmon with harissa vegetable salad

This recipe screams healthy and tastes divine if you are a salmon lover. It is so easy so cook in summer when the barbeque is out and in use.


Ingredients

  • 200 Grams
    pumpkin, peeled and thinly sliced
  • 1
    red capcicum, thickly sliced
  • 1
    red onion, cut into wedges
  • 1
    zuccini, coarsely chopped
  • Harissa spice
  • 2
    salmon fillets
  • 200 Grams
    salad mix
  • 1 Tablespoon
    red wine vinegar
  • Olive Oil

Instructions

  1. Preheat a barbeque grill on high

  2. Place all vegetable into the bowl, sprinkle with a teaspoon of Harissa and oil and toss to coat. Cook on barbeque until charred

  3. Season the fish with salt and a bit of Harissa. Grill on the barbeque.

  4. Combine the charred vegetables and salad mix, drizzle with red wibe vinegar and a bit of olive oil. Toss well co combine.

  5. Plate up fish and salad .
