Try this recipe when you are pressed for time. You will have a home cooked meal in 15 minutes. If a packet of gnocchi is not enough for two of you, get two… Nothing to be ashamed of, it is just so yumm!

Heat the oil in a large frying pan over medium high heat. Add the tomato and onion and cook till the onion softens.
Add the chorizo pieces and olives and cook, stirring, until heated through. Season with pepper.
Cook the gnocchi in a large saucepan according to packet instructions. Drain well.
Add the salami mixture to the gnocchi and stir until well combined. Sprinkle with parmesan cheese.
