Chicken pita with greek salad and grilled zucchini

Veggie intake tick. If you manage to stick to just one pita, it is a pretty healthy quick dinner option:)I like using the chicken souvlaki stripsĀ  from Coles, saves time and tastes great. You will have some leftover pitas, you can refrigerate them and use as a pizza base later on.


Ingredients

  • 1
    packet of good quality pita bread
  • 500 Grams
    chicken souvlaki strips
  • 1
    zucchini
  • 1
    small tub of tzatziki
  • 1
    cucumber
  • handful of tomatoes
  • handful of olives
  • a few cubes of Danish feta with herbs&spices
  • handful of salad leaves

Instructions

  1. Slice zucchini and grill on the griddle pan or a barbecue. Set aside.

  2. Grill chicken strips on a griddle pan or a barbecue. Make a greek salad by mixing salad leaves, tomatoes, olives, cucumber pieces and danish feta.

  3. Warm up pita bread in a frying pan.

  4. Assemble pita - chicken strips, grilled zucchini slices, greek salad and top with tzatziki.
