Braised chicken with peppers, olives and capers
Tender and colorful chicken, you will lick your fingers! Serve with roast potatoes or mashed potatoes, whatever you prefer!

Heat oil in a heavy large pot. Season chicken with salt, pepper and rosemary. Cook chicken until brown , about 5 minutes on each side. Transfer to a plate.
Add the capsicum and onions to the pot, and saute until they begin to soften.
Add the canned tomatoes, wine, olives and capers. Bring to a boil. Return the chicken to the pot.
Reduce the heat to low, cover and simmer for 30 minutes until chicken is tender and sauce has thickened slightly.
Roast potatoes or make mashed potatoes. Choose your fav option. You can also use sweet potatoes instead.
