Baked sweet spuds with zesty turkey steaks

Two main ingredients – sweet potatoes and turkey steaks. I have topped up the sweet potatoes with sweet chilli sauce ( I added too much 🙂 ) and grated ginger and added lemon zest and lemon juice to the turkey steaks. Little touches turned into a great flavour! Serve with the salad of your choice ( I love the Greek version with the splash of soft feta cheese).


Ingredients

    medium size sweet potatoes
  • 1 Tablespoon
    sweet chilli sauce
  • 1 Pinch
    grated ginger
  • 4
    minute turkey steaks
  • 1
    lemon
  • olive oil

Instructions

  1. Pre-heat oven to 200 C. Cut sweet potatoes in half. Line a tray with a baking paper. Place the potatoes, cut side up, on the tray and drizzle with olive oil. Cover with foil and bake for 20 minutes.

  2. Combine sweet chilli sauce and grated ginger. Brush the sweet potatoes with the mix, remove foil and bake for 20 more minutes.

  3. Season the turkey steaks with salt and pepper, and lemon zest. Heat olive oil in the frying pan , and cook the steaks for 3 minutes on each side. Squeeze some lemon juice onto the steaks.

  4. Serve the turkey steaks with baked sweet spuds and a salad of your choice.
