Aubergine & bacon linguine
This is definitely one of my favourite pasta recipes. Roasted aubergine and smoked bacon work magically together. You just want to pile up more magic on a plate!

Pre-heat oven to 220C. Cut aubergine into cubes, and tomatoes in half. Place vegetables on a baking tray covered with baking paper. Drizzle with olive oil. Bake for 15-20 minutes.
Whilst the vegetables are roasting, cook linguine for 12 minutes . Cut bacon into pieces and fry in the frying pan over the medium heat.
Add roasted vegetables to the frying pan. Stir well and stir through the pasta sauce.
Drain pasta and add pasta to the frying pan. Mix well all the ingredients , using tongs. Sprinkle with parmesan cheese, black pepper and parsley.
