The best spaghetti carbonara

I never wanted to try Carbonara as I don’t like the creamy sauce. It turns out you can make Carbonara sauce just using the eggs, no cream! Spaghetti Carbonara is now my fav quickest pasta meal! You can add mushrooms, kale or asparagus for a healthy twist or stick to the classic!


Ingredients

  • 200 Grams
    Pancetta or bacon, diced
  • 1
    brown onion finely chopped
  • 250 Grams
    spaghetti
  • 3
    eggs
  • 1/2 Cup
    parmesan cheese, finely grated
  • 1/4 Cup
    white wine

Instructions

  1. Place a large nonstick frying pan over medium-high heat. Add the pancetta and saute until beginning to brown. Add the onions and stir for 2 minutes. Add the wine and boil until reduced by half.

  2. Cook pasta according to packet instructions.

  3. Meanwhile, in a small bowl, add 2 egg yolks and one egg, beat with the fork. Mix in cheese and pepper.

  4. Add the spaghetti to the frying pan. Remove from the heat. Add the egg mixture to the frying pan and stir until it coats the pasta. Set the frying pan over very low heat and stir constantly just until it becomes creamy.
