Stuffed baked sweet potatoes
Baked sweet potatoes goodness filled with broccolini, smoked chicken and crushed hazelnuts. You should have plenty of leftovers left unless you devour all of the stuffed sweet potato boats. Serve with a side salad.

Preheat the oven to 220C. Line a baking tray with the baking paper. Cut sweet potatoes in half lengthways. Place, cut side up, on the prepared tray. Spray lightly with olive oil. Bake for 30 minutes until slightly golden.
Dice chicken and broccolini. Combine chicken, broccolini and crushed hazelnuts. Get the potatoes out of the oven and scoop the soft flesh from the sweet potatoes. Add the sweet potato flesh to the chicken mixture. Stir to combine.
Spoon the chicken mixture into the sweet potato shell, piling it high. Sprinkle cheddar cheese on top. Reduce oven temperature to 180 C and bake for 10 minutes until the cheese is melted.
Serve with the side salad.
