Shakshouka Eggs

If you have never heard of shakshouka eggs, this what google will tell you: ” Shakshouka  is a dish of eggs poached  in a sauce of tomatoes, chilli peppers, onion, often spiced with cumin.”

The most enjoyable part is scooping all the deliciousness with a piece of fresh bread. Don’t simmer down your sauce too much, let the eggs float!


Ingredients

  • 1/2
    red onion
  • 1/2
    red capsicum
  • 1
    handfull of medley tomatoes
  • 1
    can of crushed tomatoes
  • 4
    eggs
  • 1 Tablespoon
    tomato chutney of capsicum chutney
  • 1 Pinch
    cumin
  • 1 Pinch
    smoked paprika
  • 100 Grams
    feta or haloumi (optional)
  • olive oil
  • 1
    garlic clove, thinly sliced

Instructions

  1. Heat olive oil in a frying pan. Add slices of red onion and capsicum. Fry for a few minutes. Sprinkle with cumin and smoked capsicum. Add tomatoes (cut in half). Stir the mixture well . Add chopped garlic and fry for a few more minutes.

  2. Add a can of tomatoes and tomato chutney. You can add pieces of feta or grilled haloumi. Simmer on a medium heat for 5 minutes.

  3. Make wells in the tomato mixture and crack 4 eggs ( or as many as you can fit). Cover with a lid and poach for 5-7 minutes on medium heat . Serve with fresh bread. Turkish bread is a perfect fit for this dish.
