Russian cheesecake aka zapekanka

You may think Russians are weird eating cheesecake for breakfast. I swear it is a breakfast dish because the main ingredient is cottage cheese. I loved eating zapekanka growing up as a kid. My Aussie partner gave the dish a big thumbs up, so it is approved by non Russian 🙂


Ingredients

  • 250 Grams
    cottage cheese
  • 2 Tablespoons
    semolina
  • 1
    egg
  • handfull of raisins
  • 1 Pinch
    baking powder
  • salt and sugar
  • knob of butter

Instructions

  1. Preheat the over to 180 C. Whisk the egg in a bowl. Add cottage cheese, semolina, raisins and baking powder. Stir well. Season to taste with salt and sugar.

  2. Grease baking tray with butter and dust with semolina powder, so your zapekanka doesn't stick to the tray. Spread the zapekanka mixture on the bottom of the tray. Bake for 20 minutes until the top is golden.

  3. To get the zapekanka easily out of the tray - run the knife around the zapekanka edges. Flip it on the chopping board. Place another chopping board on the bottom of zapekanka and flip it again. Smear the sour cream on top and serve.
