Roast veg and cider sausages

Delicious combo of cider , sausages and apples. You only need half a cup of cider for the recipe, so  enjoy drinking the rest whilst cooking!


Ingredients

  • 400 Grams
    baby potatoes, cut into wedges
  • 1
    small red cabbage, cut into wedges
  • 2
    Pink lady apples, cored, cut into wedges
  • 2 Tablespoons
    Olive Oil
  • 1
    packet of pork sausages
  • 1/2 Cup
    chicken stock
  • 1/2 Cup
    apple cider
  • 1 Tablespoon
    wholegrain mustard
  • 1
    chopped garlic cloves
  • 2 Teaspoons
    cornflour

Instructions

  1. Preheat oven to 220C. Line a large baking tray with baking paper

  2. Place the potatoes, cabbage, apples on the baking tray, drizzle with oil. Bake for at least 20 minutes until lightly browned

  3. Heat the oil in the large frying pan over medium-high heat. Add the sausages and cook until browned. Combine the stock, cider, mustard and garlic in a jug. Add the cider mixture to the pan. Reduce heat to medium-low and cook, covered until sausages are cooked

  4. Transfer sausages to a plate. Add cornflour to the pan and cook, stirring until the sauce boils and thickens

  5. Transfer the sausages and roast veg to the plates. Drizzle with the sauce.
