Quick Pad Thai

I have had a fair share of this traditional Thai fried noodles whilst living in Thailand for three years.  This recipe is simple using the ready made Pad Thai sauce (choose a good quality one), but captures all the key flavors of everyone’s fav Thai dish.


Ingredients

  • 1
    jar (sachet) of Pad Thai sauce
  • 1
    packet of Pad Thai noodles
  • 200 Grams
    chicken breast
  • 200 Grams
    prawns
  • 2
    eggs
  • 100 Grams
    bean sprouts
  • 1
    sliced green onion
  • 1 Tablespoon
    coarsley chopped peanuts
  • 1 Teaspoon
    fish sauce
  • 1 Tablespoon
    sweet chilli sauce
  • 1
    lime
  • Peanut or olive oil
  • coarsely chopped freshed coriander

Instructions

  1. Heat oil on the wok. Cook sliced chicken breast. Set aside. Cook Prawns. Set aside.

  2. Whisk the eggs. Cook eggs in the wok. Start breaking them up once set.

  3. Cook noodles as per packet instructions.

  4. Add chicken pieces and prawns back to the wok. Add the sauces, and coat the ingredients with the sauce. Add noodles to the wok. Stir well. Add a dash of fish sauce and sweet chilli sauce to balance the flavours.

  5. Add spring onions and bean sprouts. Cook for one more minute, stirring well. Garnish with chopped peanuts and coriander. Serve with slices of lime.
