Pork Sausages & Tomatoes Penne

Sausage is a comfort food, and pasta can be as well. Combined together, you get a double pleasure. No matter how bad your day was, it will bring a big smile on your face. And a generous pour of red wine to go with the pasta, of course! My personal favourite is pork and apple cider sausages.


Ingredients

  • 350 Grams
    penne pasta
  • 1
    packet of pork sausages
  • Olive Oil
  • 1
    brown onion finely chopped
  • 2
    chopped garlic cloves
  • splash of red wine
  • 1
    punnet of grape tomatoes
  • grated parmesan to serve
  • 1
    jar of Red wine pasta sauce

Instructions

  1. Cook the pasta according to packet instructions. Dain well.

  2. Remove the sausage casings and cut them into small pieces. Cook sausages in a frying pan over medium-high heat until brown. Transfer to a bowl.

  3. Cook the onion until it softens. Add garlic and cook for one more minute.

  4. Add pasta sauce and a dash of red wine. Bring to the boil. Reduce the heat and add grape tomatoes. Cook for a few minutes.

  5. Add the sausage meat and stir to combine.

  6. Pour the tomato mixture over the pasta. Divide amongst the serving plates , and sprinkle with grated parmesan and ground pepper.
