Pea, pumpkin & bacon spaghetti

Sweetness of pumpkin and saltiness of bacon. Big thumbs up!


Ingredients

  • 250 Grams
    spaghetti
  • Olive Oil
  • 200 Grams
    diced bacon
  • 1/2
    red onion, cut into wedges
  • 200 Grams
    pumpkin, diced
  • 1
    can crushed tomatoes
  • 1/2 Cup
    frozen peas

Instructions

  1. Cook pasta according to packet instructions

  2. Meanwhile, heat the oil in the frying pan and cook bacon until browned. Transfer to a bowl.

  3. Add onion and pumpkin to the frying pan and cook until lightly browned. Add crushed tomatoes and bring to a simmer. Reduce heat and simmer until the pumpkin is tender and the sauce thickens.

  4. Add the peas, bacon and pasta to the pan and stir well. Cook till peas are tender.
