Oozing eggs on smashed avo toast
I love this super simple toast for brekkie – the colours just pop on the plate. I have scattered pickled zucchini around the toast, only because I have just bought a jar . Get creative and use whatever you like to enhance the look of your toast on the plate 🙂 I have used rye bread for the recipe. Use whatever bread your buy for your household. Multiple the ingredients by the number of people you have to feed.

Boil water in a medium saucepan. Once the water has boiled, place the eggs in the water using the spoon. Cook for 5 minutes to achieve a soft boiled consistency. If you struggle peeling the soft boiled eggs, cook them for a minute or two longer. Run the eggs under cold water, peel and slice in half.
Whilst the eggs are cooking, toast your bread and mash the avocado.
Spread the mashed avo on toast, and pop the eggs on top. Season with salt and pepper. Sprinkle with chopped chives (you can totally skip the chives if you have not got the herbs).
