Miso flavoured broth with spicy pork and ramen noodles

Such a perfect winter dish to get your spirit up. You can make the pork mince as spicy as you like. The recipe makes two and leftovers or maybe no leftovers cause you just want to keep slurping the yummy goodness.


Ingredients

  • 1
    leek
  • 1
    can of corn
  • 500 Grams
    pork mince
  • 1 Teaspoon
    chilli sauce
  • 1 Liter
    beef stock
  • 1 Tablespoon
    white miso paste
  • 1 Tablespoon
    soy sauce
  • 1
    packet of ramen noodles

Instructions

  1. Bring beef stock to the boil, add one cup of water and miso paste and soy sauce, stir well and let it simmer.

  2. Heat olive oil in a frying pan. Slice the white part of the leek. Fry for a few minutes over a medium heat and add corn and cook for a couple more minutes. Transfer to a bowl and set aside.

  3. Cook pork mince in the same pan, breaking up lumps. Add your favourite chilli sauce (or a mix of two). Simmer for 5 minutes and mix with he leek and corn mixture.

  4. Whilst, the pork is cooking. Cook ramen noodles in a boiling water according to packet instructions (approx. 4 minutes). Drain and set aside.

  5. Assemble your soup bowl by placing noodles, leek and pork mixture and pouring broth over the noodles and pork mince.
