Heavenly salmon with soba noodle salad

Salmon and ginger lovers – this recipe is a must to try. I am addicted now! It requires a bit of time coordination when making salad and cooking salmon. You will time it perfectly after cooking it a couple of times.


Ingredients

  • 1
    fillet of salmon
  • 2
    garlic cloves, thinly sliced
  • 1
    small piece of ginger, finely sliced
  • 2 Tablespoons
    soy sauce
  • 1 Tablespoon
    sake or mirin
  • 1 Tablespoon
    honey or marple syrup
  • 200 Grams
    soba noodles
  • 1
    carrot
  • 100 Grams
    sugar snap peas
  • 1
    large handfull of kale
  • sesame oil and soy sauce for the dressing

Instructions

  1. Season salmon fillet with salt and pepper. Marinate salmon with slices of garlic, ginger , soy sauce, sake and honey. Keep in the fridge for at least 5 minutes.

  2. Boil water for the soba noodles. Prep vegies-peel carrots into stipes using the peeler, cut sugar snap peas in half and trim kale.

  3. Heat olive oil in a frying pan. Place salmon in a pan and pour marinade on top. Cook for 8-10 minutes, turning once and keep basting your salmon in marinade. Gradually reduce heat as your sauce starts reducing.

  4. Whilst your salmon is cooking, place noodles in the boiling water and cook for 4 minutes , adding prepared vegies in the last 2 minutes of cooking. Run under the cold water and drain.

  5. Place soba noodles and vegies in a large salad bowl. Drizzle with sesame oil, soy sauce, splash of lemon juice and coat well using your hands. You can add chopped ginger as well to the salad. Serve salad with salmon.
