Glazed Lemon pepper chicken

Once you pop the lemon glazed chicken in the oven, the aroma will populate the kitchen. Don’t overcook the chicken to keep it moist and tender!


Ingredients

  • 2
    large chicken breasts
  • 4 Tablespoons
    honey
  • 1
    finely grated zest and juice of one lemon
  • 2
    garlic cloves, crushed
  • 1 Tablespoon
    Dijon mustard
  • black pepper
  • 400 Grams
    baby potatoes
  • steamed broccoli

Instructions

  1. Slash each chicken breasts 3 times with a sharp knife. In a shallow dish, mix the honey, lemon zest and juice, garlic, mustard and black pepper.
    Add the chicken and turn to coat. Leave to marinate for at least 10 minutes.

  2. Preheat oven to 220 C. Whilst chicken is marinating, cut potatoes into wedges, drizzle with oil, rub with herb spices and season with salt and pepper. Place potatoes in the oven on a roasting tray.

  3. When chicken is marinated, add the chicken to a roasting tray. Pour any excess marinade on top.

  4. Roast for 20 minutes till potatoes are tender and chicken is cooked. Serve with steamed broccoli and pan juices.
