Crispy gnocci with bacon, mushroom, parmesan

Crisp up the gnocci in the frying pan to add a crunchy texture. It takes 15 minutes to whip up the dish and you will feel you are eating out. Restaurant quality flavour!


Ingredients

  • 500 Grams
    packet of gnocci
  • Olive Oil
  • 1
    small brown onion, finely chopped
  • 1
    garlic clove, crushed
  • 200 Grams
    bacon, finely chopped
  • 1
    punnet of mushrooms, halved
  • 1/4 Cup
    white wine
  • 100 Grams
    baby spinach
  • parmesan cheese, finely grated

Instructions

  1. Cook gnocci according to packet instructions. Drain really well. Set aside.

  2. Heat olive oil in the frying pan. Add the gnocci until golden brown. Set the gnocci aside.

  3. Fry onion until soft. Add the garlic, bacon and mushrooms and cook for 5 minutes. Add the white wine and cook until reduced slightly. Stir through baby spinach until wilted.

  4. Return the gnocci to the pan with grated parmesan cheese. Cook, stirring until heated through.
