Chicken nuggets with sweet potato and kale chips

This dish is a perfect compliment to a a movie night in. Place all the elements on a large chopping board and dig in. No fork required. If you are not kale fan, maybe the kale in chips form will win you over 🙂


Ingredients

  • 2
    chicken breasts
  • 1 Cup
    panko breadcrumbs
  • 1 Teaspoon
    fresh or dry thyme leaves
  • 1/2 Cup
    plain flour
  • 2
    eggs, lightly whisked
  • 2
    sweet potatoes
  • 1
    small bunch of kale
  • 1 Teaspoon
    smoked paprika
  • 1 Teaspoon
    ground cinnamon

Instructions

  1. Pre-heat oven to 180 C. Use a rolling pan to gently pound the chicken to flatten slightly. Cur the chicken into bite size piece. Dip the chicken in the flour and shake off any excess. Dip the chicken in the egg, then the breadcrumb mixture (panko breadcrumbs and thyme leaves). Place chicken pieces on the baking tray lined up with baking paper.

  2. Cut the sweet potatoes into matchsticks or wedges (whatever shape you prefer). Place on a baking tray lined up with baking paper. Drizzle with olive oil and ground cinnamon . Bake in the oven for about 20 minutes until golden.

  3. Add chicken tray to the oven as well. Bake for about 15-20 minutes until cooked through.

  4. If you are making kale chips, add them in the oven in the last 5 minutes. Place kale pieces on the baking tray, sprinkle with olive oil and smoked paprika if you like.

  5. Arrange chicken , sweet potato chips and kale chips on the large chopping board. Serve with mayo and sweet chilli sauce as the dipping sauces for you chicken and chips.
