Cheesy cauliflower bowl with beef

The hero of the dish (I watch MKR too much 🙂 ) is a cauliflower bowl with grilled haloumi cheese. I have paired up the cauliflower bowl with steak. It is a very versatile dish. You can eat cauliflower bowl on it is own or add steak , fish or chicken to the side  if you are craving for more protein. Perfect autumn dish when cauliflower is in abundance.


Ingredients

  • 1
    head cauliflower
  • 1
    handful of cherry tomatoes
  • 200 Grams
    haloumi cheese, cut into cubes
  • 1
    lemon
  • 1 Teaspoon
    honey
  • 1 Teaspoon
    grainy mustard
  • 2 Tablespoons
    capers
  • Olive Oil
  • 2
    eye fillet steak

Instructions

  1. Heat oven to 200 C degrees.
    Cut cauliflower into florets and blitz it in the blender until it resembles couscous. Heat oil in the oven proof pan and cook cauliflower for a couple of minutes til it starts browning. Transfer to the oven for about 10 minutes to get more colour.

  2. Cut tomatoes in half. Place tomatoes and cubes of haloumi cheese on a baking tray and drizzle with olive oil. Transfer the tray to the oven.

  3. Make a dressing by combining honey, mustard and juice of one lemon. You can add a dash of hot water to help dissolve the honey.

  4. Cook the steak the way you like it. You can just season it with salt and pepper. I like using steak seasoning. Cook for 3 minutes on each side and let it rest covered with foil.

  5. Remove cauliflower, tomatoes and haloumi from the oven. The tomatoes and haloumi might take just a bit longer. Divide cauliflower between 2 bowls and top with haloumi, roasted tomatoes and coat all the ingredients well with the dressing. Cut your steak and serve it on the side.
