Baked salmon with sweet potato mash

I love salmon and sweet potatoes, and both are present in this recipe. Whilst the salmon is baking in the oven, make the sweet potato mash with a dash of ginger! I have thrown some kale chips on the plate as well.


Ingredients

  • 2
    salmon fillet
  • 1
    scoop of butter
  • 1
    finely grated rind and juice of lemon
  • 1 Tablespoon
    chopped chives
  • 1 Tablespoon
    chopped dill
  • 2
    large sweet potatoes
  • 1 Teaspoon
    chopped ginger

Instructions

  1. Preheat oven to 200C. Cut two squares of foil and brush with the melted butter. Place a piece of salmon on each square and spoon over the lemon rind and juice. Sprinkle with chives and dill. Season to taste with salt and pepper. Wrap the foil over salmon loosely.

  2. Place salmon parcels on a baking sheet and bake for 15 minutes or until salmon is cooked to your liking.

  3. Meanwhile, cut sweet potatoes in cubes and boil until ready. Mash sweet potatoes and chopped ginger together. Serve salmon with a sweet potato mash and side salad , if desired.

    I haven’t had the privilege of trying this dish at the moment… I hope that the creator of this dish will rectify that soon, especially as she has talked it up so much. I expect it on my desk within the next hour! 🙂
