Roast salmon & cauliflower salad

I love discovering new salmon recipes and this one definitely hits the mark. It is a must try recipe when cauliflower is in season. If I had my own restaurant this dish would be on the menu 🙂


Ingredients

  • 1 Cup
    quinoa
  • 1/2
    cauliflower, cut into flortes
  • 2
    salmon fillets
  • Pinches
    sumac and cumin
  • 1
    lemon
  • 1
    small tub of Greek style yoghurt
  • fresh mint leaves
  • 2
    garlic cloves, crushed

Instructions

  1. Preheat oven to 200 C. Place cauliflower florets on a baking tray lined up with baking paper. Sprinkle with olive oil, sumac and cumin spices. Roast , stirring once, for 25 minutes or until golden.

  2. Cook quinoa according to the packet instructions and let it rest.

  3. Mix lemon zest, crushed garlic, pinch of sumac and cumin. Place salmon fillets on a baking tray lined up with baking paper. Season salmon with salt and pepper, and spread the spice mixture on top. Drizzle some lemon juice over the salmon . Roast salmon for the last 12 minutes of cauliflower roasting time. Set aside and rest for a few minutes. Coarsely flake salmon.

  4. Prepare dressing by mixing yoghurt and juice of half a lemon.

  5. Add the cauliflower florets to the quinoa and top with flaked salmon. Drizzle with yoghurt dressing. Sprinkle with mint leaves and extra sumac.
