This is not just a brekkie dish , it is a quick midweek dinner too. I love making eggs for dinner after a super long day, when you are too exhausted to spend more than 1o minutes on cooking dinner. I use wraps to go with eggs, so you can eat your eggs burrito style!


Ingredients

  • 1/2
    red capcicum, thickly sliced
  • 1/2
    zuccinni cut into slices
  • a bunch of grape tomatoes
  • 4
    ham slices
  • 4
    eggs
  • wraps to serve
  • 2 Tablespoons
    tomato chutney

Instructions

  1. Heat oil in the frying pan over medium heat. Fry capsicum, zucchini and tomatoes until tender. Add ham slices and fry for a couple of minutes. Ad tomato chutney and mix through.

  2. Make insertions in the veg mixture and crack eggs, season with salt and pepper. Cover with the lid, and cook till the eggs are ready. You can also sprinkle pieces of avo on top.
