Baked salmon and asparagus

Load up on healthy Omega 3 with this simple one pot salmon dish.


Ingredients

  • 4
    potatoes, cut into quarters
  • 2
    salmon fillets
  • 1
    bunch asparagus
  • 1/2
    punnet of grape tomatoes
  • Olive Oil
  • basil leaves
  • balsamic vinegar

Instructions

  1. Preheat oven to 180 C. Drizzle olive oil over the baking tray. Place potatoes on the tray. Bake in the oven for 20 minutes.

  2. Add salmon (season with salt and pepper), asparagus and tomatoes to the tray. Spinkle balsamic vinegar over the dish. Bake for 10 minutes until salmon is ready. Sprinkle basil leaves on top once the dish is out of the oven.
